Honduras Bella Vista

We first met Carlos in February of this year, at Elio’s (his neighbour and someone we work with) recommendation that we evaluate his coffee to see if it could be specialty. Carlos’ Bella Vista not only could be specialty - it landed as one of our best Santa Barbara lots this year.
All the trees are between 3-5 years old with one manzana total (1.75 acres or 7000 sq meters). 1/2 manzana more on the way to production across to the other side of the mountain where it is mainly planted with mountain pines. He’s currently using Elio’s dryer but next year there are plans to build one for him. The perimeter of the farm is planted with a variety of avocado called Aguacate Anise, which is unique to the area. He’s got other trees like guama for shade and nitrogen for the soil.
Mainly his business is produce, selling vegetables a bumper crop but he says there is more money in coffee for him. Especially for specialty.
For all types of filter coffee brewing, we recommend the following parameters:
- Brewing ratio: 1g coffee to 16-17g water
- Slurry temperature (coffee+water): 195-200° F
- Extraction: 19.5-20.5%
