49th is looking for an experienced Executive Chef / Culinary Director to lead our 49th Cafes food and pastry program and team. 

Job Description 

The Executive Chef is a member of the company’s management team responsible for providing leadership, planning, direction for the food and Back of House (BOH) activities in all 49th retail cafés. This will include but not be limited to monitoring and assessing sales and performance, leading BOH aspects of new café opening plans, developing menu items & innovations, implementing new protocols, multi-level training, creating structure and mentoring management staff. This position will prepare and deliver the annual food plan including revenue, profitability, and cost management goals.


This position will serve as a role model, both internally and externally, and will exemplify the company’s culture and values. The position will be based in Vancouver, B.C.

Primary Responsibilities

Café Performance & Management

  • Develop plans to grow same café revenue and profit while maintaining exceptional quality & experience
  • Work with Director of Finance to develop and monitor café KPIs/targets including wages, purchases etc.
  • Achieve annual café KPIs/targets including wages and purchases
  • Complete monthly and annual performance analysis to determine issues and opportunities for improvement in cafés
  • Review monthly purchases (food & food supplies) cost analysis to achieve targets; complete regular COGs analysis of current menu
  • Coach Managers to complete labour analysis against KPIs/targets on a weekly basis
  • Share and monitor targets and KPIs/targets with store management
  • Work with suppliers to gain access to best pricing
  • Assess and streamline wages across all cafés
  • Create and implement health and safety procedures and new polices and procedure to ensure all locations are running in accordance with health and safety laws
  • On call to assist with emergencies 

Recipe Development / Innovation

  • Develop new menu items that deliver exceptional food experience and meet profitability benchmarks set by Director of Finance
  • Leverage market trends to create new innovations that can be successfully executed in 49th Parallel cafés
  • Build seasonal menus to build excitement and new news for cafés

People Management, Training and Development

  • Manage BOH team leads
  • Lead goal setting & quarterly performance reviews for management staff
  • Build and manage BOH hiring and training program including training materials and BOH management training
  • Create ongoing development plans for all staff and build succession plan to include future management
  • Plan and execute training of new items, routines, and techniques
  • Hiring and training all staff members for the back of house (BOH) such as pastry chefs, line cooks and dish washers
  • Train front of house (FOH) on the ingredients of the products being sold to be able to answer any customer questions
  • Build and encourage exceptional relationships between the BOH and FOH
  • Run food, clear dishes, clean, help Front of House where needed
  • Support staff to ensure strong performance; Raise and keep staff moral high
  • Help with daily kitchen operations when understaffed or for the purpose of reducing labour when needed; lead from the front especially with large orders or big calendar days

Exceptional Quality in Cafés

  • Ensure 49th Parallel exceptional customer service is in operation at all 49th cafes
  • Complete ongoing quality checks for sanitation, health & safety and food quality/delivery
  • Test new techniques and ideas in ‘real world’ setting
  • Test new equipment for ability to deliver to 49th quality standard
  • Develop and train simple and repeatable methods for BOH café staff to maintain/improve quality product

New Café Openings

  • Lead new café opening efforts for BOH
  • Assess layout, equipment and workflow for each new site
  • Participate across all aspects of opening project (design, planning, and opening phases) as required to support BOH success
  • Lead hiring & training of BOH team for new locations
  • Develop BOH new café opening best practices

Knowledge & Skills

  • Excellent knowledge of food trends, café food, specialty coffee industry and market in North America
  • Proven track record of managing back of house targets, operations, scheduling, staff and legal aspects
  • Ability to build strong relationships with peers and employees
  • Exceptional leadership and management experience
