Job Description  

The Head Trainer, Back of House is a member of the company’s café management team responsible for creating a training program for all café Back of House (BOH) positions for every location.   
The Head Trainer, Back of House will also assist the Executive Chef in the running of the all-café locations, including hiring and developing employees. This will involve regional administrative duties, staff development plans, café health and quality checks, and general housekeeping. The Head Trainer, Back of House, will help develop and empower team leads to take ownership over their cafés and work through challenges independently. 
This position will serve as a positive role model, driving our 49th Parallel passion for coffee and doughnuts both internally and externally, and will exemplify the company’s culture and values. The position will be based in Vancouver, B.C. 


Primary Responsibilities 


Café Performance & Management  

  • Assist in Developing plans to grow same café revenue and profit while maintaining exceptional quality & experience 
  • Assist Executive Chef to Achieve annual café KPIs/targets including wages and purchases 
  • Assist and guide monthly and annual performance analysis to determine issues and opportunities for improvement in cafés 
  • Assist Executive Chef with Reviewing monthly purchases (food & food supplies) cost analysis to achieve targets, complete regular COGs analysis of current menu 
  • Coach Managers to complete labour analysis against KPIs/targets on a weekly basis 
  • Share and monitor targets and KPIs with store management 
  • Work with suppliers to gain access to best pricing 
  • Assist in creating, implementing, and ensuring adherence to the health and safety procedures and new polices and procedures to ensure all locations are running in accordance with health and safety laws 

New Café Openings  

  • Lead training and planning, and involved in execution of the plan 
  • Responsible for hiring, training, and scheduling for BOH positions

People Management and Development: 

  • Train Kitchen Team Leads on:
    • Inventory and ordering
    • Operations
    • Scheduling
  • Collaborate with Executive Chef on ongoing development plans for all kitchen staff and build succession plan to include future management positions
  • Create kitchen policies and best practices: align Café’s/Kitchen’s current operations
  • Lead on hiring, and discipline of BOH employees, within our company polices. 
  • Drive and embed behaviours and values that build and encourage exceptional relationships between the BOH and FOH

Lucky’s Doughnut Training:  

  • Develop training courses to be utilized by kitchen team leads for every BOH position for the purpose of thoroughness and consistency across locations
  • Continued bi-annual/annual updates of finished training documents to ensure relevance and best practices 
  • Provide feedback and coaching to Kitchen Team Leads to facilitate quality control in the form of training plans
  • On-call to assist with emergencies at cafés (pull shifts, problem solving, etc.)
  • Plan and execute training of new items, routines, and techniques

Assist Executive Chef with administrative duties and tasks, including but not limited to: 

  • Menu updates, Syllabus
  • Project manage new launches, including:
    • New menu launches (new feature doughnuts, Hot Chocolate Festival, seasonal menus, etc.)
    • New café routines
    • Create costing
    • Work policies and best practices (document for sharing)
  • Involved in Kitchen Team Lead meetings, as requested
    • weekly planning
    • In-café training and development plans and updates
  • Café wellness checks:
    • Doughnut quality check, recipes, etc.
    • Café cleanliness and organization
  • Routine admin tasks:
    • Generate and assess sales and labour reports


Qualifications & Skills 

  • Proven track record of managing: kitchens, kitchen operations, scheduling, staff
  • 2-3 years in a manager role, in a similar setting
  • Culinary, pastry diploma is an asset
  • Ability to build strong relationships with peers and employees
  • Exceptional leadership and management experience
  • Results-oriented with exceptional execution capabilities
  • Strong inspirational leader who enables teams to deliver on goals
  • Excellent customer focus
  • Can prioritize multiple projects & meet tight deadlines; strong project management skills
  • Attention to detail and presentation of information
  • Ability to excel under pressure
  • Highly developed communications (verbal, written) skills
  • Good knowledge of computer skills – PowerPoint, Excel, Word
  • Strong attention to detail, making sure hygiene and food safety standards are met in all stages of food preparation
  • Ability to create and follow a strict regimen to check freshness of food and ordering supplies as necessary
  • Displaying and encouraging good team spirit and organization skills for an efficient flow of production
