Colombia El Recuerdo (Pink Bourbon)
This is a small separation of Pink Bourbon from Carlos Guamanga's farm, El Recuerdo. Expect a wonderfully elegant, complex cup profile absolutely bursting with a wide spectrum of fruit and floral notes. Carlos’ production of this variety is quickly becoming a high point for us in all of our Colombian offerings.

49th Parallel Crop To Cup Story
One of our longest relationship coffees in Colombia, it always brings a smile to our face to see this coffee come into the roastery.
Located in Pitalito, Carlos Maro Guamanga (with his wife Patricia) is working at El Recuerdo to grow fantastic tasting Caturra, Pink Bourbon and Tabi varietals. We like working with Carlos because he is very involved in roasting and cupping his own coffees, something that’s quite rare for the majority of smallholder producers.
Carlos is always willing to experiment with different processing methods, varieties and fermentation times. He is also ecologically minded with his farming practices, using natural spring water found on El Recuerdo in his coffee processing.
This lot was fermented for 24 hours before depulping of the cherries, then fermented in tanks for 36 hours and dried on raised beds. The Pink Bourbon that Carlos is producing is always a high point for us and we’re excited to see his production of this variety growing in size each year.
What Is Pink Bourbon?
An Incredibly rare hybrid cherry that is a mix of Red and Yellow Bourbon. This year we had Carlos carefully separate this variety out so we could share this unique and special coffee with you.
Brewing ratio: 1g coffee to 16-17g water / Slurry temperature (coffee+water): 200 - 205 ̊F / 93 - 96 ̊C / Extraction: 20 - 21% / TDS 1.38-1.41%
