49th Parallel Crop To Cup Story

In Costa Rica, Martin Ureña owns and operates the La Chumeca Micromill and several farms, including La Fila.

Located at 1800 m.a.s.l. in the Tarrazu growing region, Martin is producing only natural processed coffees. He sometimes experiments with more adventurous processing methods and fermentations, always monitoring the coffees progress.

Martin’s coffees are processed first by using a two tank system that separates ‘floaters’ or impurities from the coffee before being sun dried on raised african beds at La Chumeca for approximately 17 days.

A Bright and Warm Hug in the Morning

If you’re going to have a vice in life, let it be good coffee. Specifically, this coffee, Costa Rica La Fila, is another thoughtfully sourced and expertly roasted coffee from 49th Parallel. It starts bright like most Central American coffees, but it isn’t overly acidic. Deeper into the cup the juicy (describe as Pomegranate) notes really start to come through, but it is never sour or biting. Preparation: Hario V60 pourover. Ratio: 16:1 Notes: Tried it at a 14 & 15 ratio, but I preferred the standard 16:1. Preparation: Technivorm Moccamaster Ratio: 15:1 Notes: The flavor is lighter in the machine preparation, but in the morning and for the first cup, this is a great ratio. Thanks 49th Parallel!
