Our partnership with the Zelaya family in Antigua, Guatemala is one of our most cherished and longstanding. We couldn’t think of a better way to celebrate it than featuring these unique and delicious coffees, which represent the very top lots offered to us from all their farms this year. This set features 3 different lots of coffee from 2 different farms owned by the Zelaya family - Pulcal and Bella Carmona.

This trio collection includes:

  • Three 8oz coffee bags of Guatemala Antigua (2 processes: washed and honey).
  • One coffee card describing their unique processes and tastes.

Product Details

1. Guatemala Pulcal Malawi Geisha (Washed)

BERGAMOT · LEMONADE · ORANGE BLOSSOM

Description:

This is a unique offering from Pulcal, a small selection of Malawi Geisha. The original seedlings for this variety were gifted to Maria by a friend visiting from Malawi. Genetically distinct from the more common Panamanian derived geisha, this lot still demonstrates the trademark elegance and quality that Geisha is now synonymous with. This lot underwent a tank fermentation of 16-18 hours and a double washed processing. In the cup expect a bright, refreshing citrus character like lemonade, complimented by aromatics like black tea and orange blossom and a honey-like sweetness.

2. Guatemala Pulcal Java (Washed) 

CHAMOMILE · ORANGE · PRALINE

Description:

This is another lot sourced from Maria and her farm Pulcal,a washed processed lot of Java. The Java variety can be traced back to a selection of wild coffee collected in Ethiopia, which made its way firstly to Indonesia for selection trialling and, from there has been distributed in Central America as a resilient variety with great cup quality potential. This lot, like the Malawi Geisha, underwent a tank fermentation of 16-18 hours and a double-washed processing. The result is an exceptionally clean, balanced cup with sweet florals like chamomile and juicy, orange-like acidity.

3. Guatemala Bella Carmona (Honey)

BLACK CHERRY · NECTARINE · SYRUPY

Description:

This is a honey-processed lot of Bourbon and Caturra varieties from Bella Carmona. Owned by Luis Pedro Zelaya, Bella Carmona is a 4th generation farm near the city of Antigua. This lot underwent a dry depulping, leaving the fruit mucilage intact, and was then sun dried for 15-20 days. Our favourite things about this lot are its over the top sweetness and dense, syrupy mouthfeel. Look forward to a rounded, fruit forward profile with concentrated notes of stone fruit, citrus and heavy, sugary sweetness.

Brew Method

1 gram of freshly ground coffee to 16-17g water / Slurry temperature (coffee+water): 200 - 205 ̊F – 93 - 96 ̊C / Extraction: 20 - 21% / TDS 1.38-1.41%
