This is another lot sourced from Maria and her farm Pulcal, a washed processed lot of Java. The Java variety can be traced back to a selection of wild coffee collected in Ethiopia, which made its way firstly to Indonesia for selection trialling and, from there has been distributed in Central America as a resilient variety with great cup quality potential. This lot, like the Malawi Geisha, underwent a tank fermentation of 16-18 hours and double-washed processing. The result is an exceptionally clean, balanced cup with sweet florals like chamomile and juicy, orange-like acidity.


Our partnership with the Zelaya family in Antigua, Guatemala is one of our most cherished and longstanding. We couldn’t think of a better way to celebrate it than featuring these unique and delicious coffees, which represent the very top lots offered to us from all their farms this year.


Brew Method

1 gram of freshly ground coffee to 16-17g water / Slurry temperature (coffee+water): 200 - 205 ̊F – 93 - 96 ̊C / Extraction: 20 - 21% / TDS 1.38-1.41%
