49th Parallel Crop To Cup Story
On the western edge of Kenya, bordering Uganda, lies Kapsokisio Coffee Factory. Located in the foothills of Mt. Elgon in Kapsokwony town, Bungoma County, this coffee factory was built in the early 1970s and has been working with local smallholder farmers ever since. The farms lie at altitudes between 1500 and 1950 meters above sea level, with over 800 smallholder farmers in the surrounding area. Most of them are growing SL28 and SL34 varieties. Coffee at Kapsokisio is processed in the classic Kenyan way, with cherries being sorted then de-pulped using a disc pulper. After de-pulping, coffee is fermented underwater for 24 - 48 hours, then sun-dried on raised African beds. When drying, shade netting is used to protect the coffee from overheating, which can severely impact the quality.
Brewing Ratio: 18 grams of freshly ground coffee / Timer for 28 - 32 seconds / Pull 37 - 39 grams of liquid espresso / Grouphead at 200 - 201°F / 9 bars at machine gauge
