This filter and espresso duo was sourced through our partners in Peru, Origin Coffee Lab. They are working with family owned, organic certified farms located in northern Peru. Here they run many initiatives to help grow and support the small producer communities, including selective cupping to identify good cup quality potential and offering quality premiums for high scoring lots.

1. Peru Tres Quebradas

PLUM · POMEGRANATE · WHITE CHOCOLATE

This is a fully washed lot from the Los Cedros section of Onias Guerrero's farm, Tres Quebradas. In the cup, we found a really lively and sparkling acidity profile reminding us of pomegranate alongside a creamy and lingering structure reminiscent of white chocolate.

2. Peru La Palestina Espresso

CHERRY · HONEY · PLUM JAM

This is a fully washed lot produced by Zobeida Alarcon on her farm, La Palestina. We chose this lot for espresso roasting due to it's heavy sweetness and great depth. Look forward to layered confectionary and fruit notes in the cup with a round, syrupy mouthfeel.

Filter: 1 gram of freshly ground coffee to 16-17g water / Slurry temperature (coffee+water): 200 - 205 ̊F / 93 - 96 ̊C / Extraction: 20 - 21% / TDS 1.38-1.41%

Espresso: 18 grams of freshly ground coffee / Timer for 28 - 32 seconds / Pull 37 - 39 grams of liquid espresso / Grouphead at 200 - 201°F / 9 bars at machine gauge
