Hacienda La Papaya is in the Loja province of Ecuador, owned and operated by Juan Peña. Juan is a multigenerational farmer who in recent years switched his production from long stem roses to coffee after losing his flower fields to disastrous weather in 2010. Since then, he’s seen great success and his coffees have been heavily featured in barista and roaster championships in recent years. Juan is also the founder and owner of CafExporto, a specialty exporter that is working with farmers in Ecuador to develop direct relationships with roasters around the world. They also work with the University of Cuenca, partnering to develop research across different horticultural disciplines such as agronomy and biochemistry – all with the goal of producing higher quality and more sustainably produced coffee.


Brew Method

1 gram of freshly ground coffee to 16-17g water / Slurry temperature (coffee+water): 200 - 205 ̊F – 93 - 96 ̊C / Extraction: 20 - 21% / TDS 1.38-1.41%
