Description
This is another lot sourced from Maria and her farm Pulcal, a washed processed lot of Java. The Java variety can be traced back to a selection of wild coffee collected in Ethiopia, which made its way firstly to Indonesia for selection trialling and, from there has been distributed in Central America as a resilient variety with great cup quality potential. This lot, like the Malawi Geisha, underwent a tank fermentation of 16-18 hours and double-washed processing. The result is an exceptionally clean, balanced cup with sweet florals like chamomile and juicy, orange-like acidity.
