1. Burundi Bavyeyi (Washed)
Dried Pineapple · Lychee · Pink Grapefruit
This auction winning lot underwent a triple washed process, resulting in a super clean, sparkling cup character. Expect white grape juice notes, along with a range of citrus fruits, peach and a rich and long lasting sweetness.
2. Colombia El Recuerdo (Washed)
Raspberry · Mint · Orange Blossom
We love and appreciate all of El Recuerdo's coffees, but the Pink Bourbons are truly spectacular. Picked at peak ripeness, the coffees are pre-fermented for 24 hours, before being pulped and fermented. In the cup this coffee explodes with floral and raspberry notes.
3. Ecuador La Papaya (Natural)
Tropical Fruit · Oolong · Black Cherry
This lot was harvested at the end of 2022 and underwent anaerobic fermentation of at least 100 hours. Fermentation took place in the shade and temperature was kept under 24°C. After fermentation the coffee cherries were taken to drying rooms where they were mechanically dried for a period of around 30 days. The result is a bold and tropical fruit accented typica, with lively acidity and notes of chocolate.
