This is our first release from the main crop season for Nariño this year, and we thought we’d start off with bang! Ancuya is a municipality located directly on the other side of the Galeras volcano from Pasto - the capital city of Nariño.

We are calling this coffee Ancuya, due to the provenance of who produced it.  It’s really a tiny lot from two neighbours from the region: Nicolas Portillo, and Luis Edmundo Narváez. They both have Castillo at soaring altitude. They both have similar washed processing and they both dry their coffee for around 8 days on raised beds.

Like two peas in a pod, when we tasted these lots separately, what struck was the intensely juicy and dynamic pomegranate flavour of both lots. This bright coffee is exactly what we need as we transition into a colder season. Enjoy!

For all types of filter coffee brewing, we recommend the following parameters:

  • Brewing ratio: 1g coffee to 16g water
  • Slurry temperature (coffee+water): 195-200° F
  • Extraction: 20-21%
