With Alcides’ work, we are constantly reminded of our friends at El Recuerdo; and it’s no wonder - both these producers and their families are part of a progressive local specialty coffee association called Guacharos and both are obsessed with quality. Within this association, members are better able to market the coffee internationally and they are very focused on consistency in fermentation and drying especially.
At 2000m, there is high potential for slow ripening, leaving us with that round and sweet quality we love from coffees in this region, but with a lot more going on in the elegance department.
For all types of filter coffee brewing, we recommend the following parameters:
- Brewing ratio: 1g coffee to 16g water
- Slurry temperature (coffee+water): 195-200° F
- Extraction: 20-21%
