Colombia El Recuerdo
YELLOW PLUM // BLACKBERRY // CREAMY
Born in Cauca, Carlos decided to live a bit of a nomadic lifestyle and ended up settling in Pitalito. Along with his wife, Patricia, they tend to a few hectares (and growing!) of Caturra. Carlos loves order and cleanliness, and it shows with how he processes his coffee, and how it shines in the cup. The first time we visited him and his wife Patricia, he prepared a Chemex with coffee from our lot. He kept a portion of parchment and had been cupping it in the lab in Pitalito to see how the coffee was holding up. It can’t be stressed enough how rare and special that is for a smallholder farmer to do.
As a result of the last time we bought some of their coffee, Carlos decided to use the funds to build a storage facility for dried parchment, as well as install a fan system in the dryer, connected to an arduino board and temp/humidity controller. There is continual investment back into Carlos and Patricia’s business, and the results are in your cup.
Carlos and his family produce some of the most consistently delightful Caturra we’ve tried coming out of Southern Huila, and we are proud to be partnering with such a passionate coffee family for the last two years. We have serious respect for the Guamanga family; they are living a beautiful life. For all types of filter coffee brewing, we recommend the following parameters:
