AMBROSIA APPLE // TOFFEE
Carlos is a gentleman we are happily working with as one of our last Nariño coffees as the season comes to an end. Tasnaque is located within Yacuanquer, a region around the Galeras volcano that is developing quite the reputation for quality coffee production (you may have tried the Yacuanquer in previous weeks from our filter coffee menu).
In general, this past harvest in Tasnaque (and by extension Yacuanquer) experienced a bit of drought early on, but the quality come harvest time soared, with Finca Carrizo as a prime example.
With sweetness and acidity balanced, reminding us of an in season ambrosia apple, combined with a sticky toffee, this coffee is something we want to have on tap as we head into the spring.
For all types of filter coffee brewing, we recommend the following parameters:
- Brewing ratio: 1g coffee to 16g water
- Slurry temperature (coffee+water): 195-200° F
- Extraction: 20-21%
