Colombia Pasto Single Origin Espresso

A light roast espresso.
Pasto is the capital of the department of Nariño, looking towards the Pacific coast in the south of the country. The city is located in the "Atriz Valley", on the Andes cordillera, at the foot of the Galeras volcano, at an altitude of 8,290 feet (2,527 m) above sea level.
This past harvest really showed promise in Nariño, and this lot from a hardworking group of producers from the August harvest is yet another example. The rural nature of this area and the small land holdings are both challenges, but both the coffee and those who produce it are so worth it.
With juicy flavours of dried cherry, plums, augmented with sweet almond, this makes for a lovely espresso.

- Timer for 28-32 seconds
- Pull 37-39 grams of liquid espresso
