This a natural processed lot of red bourbon from the Mendoza family in Santa Ana, El Salvador, grown on their farm Finca La Providencia. In the cup expect pronounced jammy dried fruit notes, over the top sweetness and a heavy, creamy mouthfeel like chocolate syrup.
Finca La Providencia is a 50-hectare farm located in the town of Chalchuape in Santa Ana, El Salvador. It is managed by Carlos & Yanira Mendoza, a father-daughter team who were born and raised on the land here. Café Pacas, our export partners in El Salvador, have been working with together with the Mendoza family since 2007. They are growing primarily bourbon, pacas, pacamara varieties and more recently some young geisha. La Providencia is also home to Café Pacas’ Research and Development Garden. Here they have over 50 (!) coffee varieties planted, testing things such as disease resistance, cup quality and productivity/yield. This process is crucial in helping determine which varieties should be chosen for use in larger production planting on this and other farms in the area. The Mendoza family also recognize the importance of ecological sustainability in coffee production, with 12 hectares of the farm kept as a wildlife reserve. Here no hunting is permitted, and native flora and fauna exist together in the wild cypress forest at the top of the farm.
