The San José coffee farm is located in a mountain valley near the city of San José Los Naranjos, in the Santa Ana region of southern El Salvador. The farm is owned and operated by Federico Pacas. This lot contains one of our favourite varieties: Pacas, which just happens to be Federico’s last name.
This coffee is shade grown under the large umbrella-like canopy of Inga trees. The shade slows the growth of the coffee cherries which in turn leads to higher quality coffee. Federico is committed to environmental sustainability and hasn’t used any glyphosate, chemicals insecticides or fungicides since 2016. The total area covers 70 hectares, 53 of which are planted with coffee and the rest are native forests.
Cafe Tuxpal continues to upgrade and innovate their processing methods at the mill every year.
This coffee is very juicy and has great depth with notes of red grapes and nougat.
For all filter coffees we recommend the following parameters:
- Brewing ratio: 1g coffee to 17g water
- Slurry temperature (coffee + water): 200 - 205 ̊F / 93 - 96 ̊C
