In Guatemala, the higher elevations of the Terrazas farm defy imagination. It’s a place where rolling hills meld into sweeping, lush green mountains and warm winds blow in from the Tehuantepec plain. Nestled here is La Bolsa, a coffee farm that the Vides family has owned since 1958.
Coffee can flourish at this high elevation because warm winds eliminate the frost that can harm the delicate plants. At such a high altitude, the coffee cherries mature slowly producing a sweet and sophisticated cup.
Senegal Terrazas is another exceptional lot from La Bolsa, separated by individual variety this year.
The Vides family’s continuous focus on quality and their sense of social responsibility makes us excited to work with them for another year. They maintain a full school and provide access to health care for the local community.
A complex cup and a great representation of Guatemalan Caturra, Senegal Terrazas offers good body, lactic texture in the mouthfeel with cranberry-like acidity and almonds in the finish.
For all filter coffees we recommend the following parameters:
- Brewing ratio: 1g coffee to 16-17g water
- Slurry temperature (coffee+water): 200 - 205 ̊F / 93 - 96 ̊C
