Luis Pedro, farm Manager, and Agronomist at San Juan, has created a sophisticated shade growing program. New coffee plants are grown entirely under shade, and as they mature the shade is trimmed back to promote growth.
Both Eduardo, the owner, and Luis Pedro’s focus on agronomical practices is quite outstanding. They have a soil renewal program, have built a controlled irrigation system, have outstanding pruning and picking processes. These practices ensure this is one of our favourite coffees from Guatemala. This lot is dried on raised beds in a greenhouse with a ventilated roof - ideal for slow, even drying.
We picked San Juan for this year’s Holiday Filter because it’s clean, accessible, and approachable: characteristics that Antiguan coffees are famous for.
Guatemala San Juan has a juicy apricot flavour with a roasted almond finish, perfect for the Holidays.
