After the draft and natural cycle - Angel Arturo Paz is not using any chemical fertilizers and doing only organic farming practises - we have bought only 7 bags of his incredible Pacas variety. Excited to have his coffee back,  this year’s coffee has been massively improved with taste and flavour.

Arturo is a very humble and hard-working producer, also being a part of Beneficio San Vicente family, our close friends in Santa Barbara. Next year’s harvest will be a real milestone for Arturo, who has been working tirelessly for the past few years to convert his farm to operating as Organic Certified. It’s a topic dear to his heart, and it’s always one of our favourite things to talk about with a producer.

His farm La Colmena is located in the Las Flores area. The farm is looking very healthy, and we are looking forward to the upcoming harvest. Arturo has dedicated some new farm land he purchased to Pacamara, and oh boy, next season we will definitely put hands on that coffee.

In the cup, typical Santa Barbara florals with an intense note of black cherries. Tart and lingering acidity reminding us of sweet concord grapes, a great representation of the region. 

For all filter coffees we recommend the following parameters:

  • Brewing ratio: 1g coffee to 16-17g water
  • Slurry temperature (coffee+water): 200 - 205 ̊F / 93 - 96 ̊C
  • Extraction: 20 - 21%
  • TDS 1.38-1.41%
