It’s a very special occurrence when a farmer sells coffee to a buyer transparently. With so many farmers producing coffee around the world, it’s still rare to know who buys what you’ve been working on all year. We are honoured to be the ones who get to work with Elio Diaz for the first time.
Elio’s farm is located at around 1600 masl is located deep in the jungle. His bourbon trees are tall, healthy and producing outstanding cup quality. To our surprise, 2018 will be the last year we buy coffee produced by Elio Diaz, as he has given his farm to his daughter. She has then decided to pass it further on to her husband Kelvin who will be looking after the farm this year.
We believe that this transition will be smooth and non-problematic since we have great love for his coffees and how we are consistently supplied with Pacas and Bourbon varieties. The story will definitely continue this year even though Kelvin decided to give a try with Cup of Excellence in May.
This Pacas lot is the tastiest we have had so far. We are happy to see Elio Diaz depart with such a solid coffee. This cup is all about yellow fruits so expect notes of peach, yellow plum and lychee.
For all filter coffees we recommend the following parameters:
- Brewing ratio: 1g coffee to 16-17g water
- Slurry temperature (coffee+water): 200 - 205 ̊F / 93 - 96 ̊C
- Extraction: 20 - 21%
- TDS 1.38-1.41%
