This particular lot of La Roca is the culmination of the hard work of 9 producers, mainly based in Dipilto, with a couple outliers in the municipalities of San Fernando and Mozonte.

When our buyer cupped through many lots at La Estrella (our exporting partner, Caravela’s parchment drying headquarters in Nicaragua), there was a disproportionate amount of stellar lots coming out of the area around Dipilto. With so many varieties (including the gigantic Maracaturra), it was important for us to negotiate some fairly picky milling and screen sorting instructions, so we could optimize our roasting profile for this lot.

This filter lot is screen size 15-16, the smaller beans, which we are finding sweet, round flavours like strudel and coconut.

For all types of filter coffee brewing, we recommend the following parameters:

  • Brewing ratio: 1g coffee to 16g water
  • Slurry temperature (coffee+water): 195-200° F
  • Extraction: 20-21%
