Peru La Palestina



 La Palestina farm, located at 1750 masl in Cajamarca region is our first filter release this season. Jose Praxedes Alarcón Coronel has owned his farm since 1997 growing Caturra, Bourbon, Catuai and Catimor. The farm is twenty-five hectares but only 10 of it is used to grow coffee. Because of high humidity and altitude Jose is fermenting his coffee for 72 hours to break down sugars and sun drying his coffee for eight days. At the farm, you can find cassava fruit which Jose is growing for his family. During the harvest, he is hiring 15 pickers paying them around 40 Sol per day. Jose admits that coffee is the best cultivar to sustain his family and he is proud of the quality he achieved throughout the hard work he put into his farm.

This particular lot has flavours of gold kiwi and raspberry with a soft, silky mouthfeel.

For all filter coffees we recommend the following parameters:

  • Brewing ratio: 1g coffee to 17g water
  • Slurry temperature (coffee+water): 200 - 205 ̊F / 93 - 96 ̊C
  • Extraction: 22 - 23%
  • TDS: 1.38 - 1.41%
