This Colombian community blend comes from four small family farms in Popayán, Cauca, working with Banexport to ensure exceptional quality and full traceability. Cherries are centrally processed using advanced sorting, controlled bioreactor fermentation, and slow, uniform drying—preserving clarity, consistency, and a vibrant regional character.

Grown by four small producers in the highlands of Popayán, Cauca, this Castillo lot offers a comforting and balanced profile. Milk chocolate and caramel form a smooth, rounded base, complemented by stewed fruit sweetness that adds depth and warmth. The honey process—well suited to espresso—enhances body, sweetness, and crema, while slow drying in solar dryers preserves clarity and balance. High altitude conditions and mineral-rich clay soils contribute structure and gentle complexity, resulting in a versatile coffee that shines both as espresso and brewed.
