Description
This lot underwent a tank fermentation of 16-18 hours and a double washed processing. In the cup expect a bright, refreshing citrus character like lemonade, complimented by aromatics like black tea and orange blossom and a honey-like sweetness.
SOURCING STORY
Pulcal is located in the picturesque Antigua valley, Guatemala. Here Maria Zelaya, 3rd generation owner and producer, has been producing fantastic coffees for over 50 years. This is a unique offering from Pulcal, a small selection of Malawi Geisha. The original seedlings for this variety were gifted to Maria by a friend visiting from Malawi. Genetically distinct from the more common Panamanian derived geisha, this lot still demonstrates the trademark elegance and quality that Geisha is now synonymous with.

1 gram of freshly ground coffee to 16-17g water / Slurry temperature (coffee+water): 200 - 205 ̊F – 93 - 96 ̊C / Extraction: 20 - 21% / TDS 1.38-1.41%
